BACON WRAPPED SMOKED SCALLOPS
Still craving scallops? Wrap them up in some bacon, and listen to them sizzle in the smoker! The juices of these two will meld perfectly to create a dish that’s sure to amaze.
Estimated Smoke Time:
Charcoal, Soaked Wood Chips
- 1 dozen sea scallops
- ¼ cup Olive oil
- 1 tbsp. Preferred rub
- 1 lb of thin sliced bacon
1 Place the scallops in a zip lock bag. Add in the olive oil, and roll it around to coat your scallops evenly in the oil.
2 Toss the rub in, and seal the bag again. Roll it around so the scallops are now coated in the rub.
3 Let the scallops sit in the fridge with the bag to marinate for one hour.
4 Take the scallops out of the bag and roll them up in the bacon.
5 Use a toothpick to keep the bacon in place on the scallops.
6 Arrange the scallops on the grate of the smoker.
7 Once the scallops are finished smoking serve and enjoy.
