Still craving scallops? Wrap them up in some bacon, and listen to them sizzle in the smoker! The juices of these two will meld perfectly to create a dish that’s sure to amaze.

Charcoal, Soaked Wood Chips


  • ​1 dozen sea scallops
  • ¼ cup Olive oil
  • 1 tbsp. Preferred rub
  • 1 lb of thin sliced bacon


Place the scallops in a zip lock bag. Add in the olive oil, and roll it around to coat your scallops evenly in the oil. 

2 Toss the rub in, and seal the bag again. Roll it around so the scallops are now coated in the rub.

3 Let the scallops sit in the fridge with the bag to marinate for one hour.

4 Take the scallops out of the bag and roll them up in the bacon.

5 Use a toothpick to keep the bacon in place on the scallops.

6 Arrange the scallops on the grate of the smoker.

7 Once the scallops are finished smoking serve and enjoy.
