CARNE ASADA RUB
In Latin America, “carne asada” literally means “grilled meat”. While the flavors in the rubs and marinades for carne asada vary, this zippy rub adds a Latin flare with very few ingredients. This is a wet rub and should be made no more than a day in advance.
Ingredients:
- 2 cloves garlic, crushed
- 2 Tbsp lime juice
- 2 Tbsp orange juice
- 2 Tbsp extra-virgin olive oil
- 1 Tbsp lime zest
- 1 Tbsp orange zest
- 1 tsp ancho chili powder
- 1 tsp cumin
- 1 tsp salt
- 1⁄2 tsp pepper
- 1⁄2 tsp Mexican oregano
Directions:
1 Combine in a small bowl.
2 Slather on the meat and allow it to sit at least 30 minutes before smoking or grilling.
