DEVIL’S SMOKED CHICKEN
For those who love the heat, this smoked chicken recipe is for you. This well-marinated chicken and a mix of great aromatics such as thyme, dried oregano, cloves, cayenne pepper, and paprika will surely make your whole chicken “deviled up” with spicy, savory goodness. Serve this dish in any special occasion as a main course and prepare to leave your guests thrilled.

Ingredients:
- 1 whole chicken1 gallon of water (or enough to completely submerge your chicken)
- 3/4 cup salt
- 1 cup sugar
- 1 tbsp. of pepper
- 1 tbsp. of cayenne
Rub Recipe: - 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tsp. onion powder
- 2 tsp. cayenne pepper
- 2 tsp. paprika
- 2 tsp. garlic powder or 2 crushed garlic cloves
- 1-1/2 tsp. black pepper
- 1 tbsp. dried oregano
- 1 tbsp. dried thyme
Instructions:
1 In a large pot, mix in the water, salt, and sugar, and allow the mixture to boil. When it boils, remove the mixture from the heat and stir in some ice cubes to cool it down before adding the rest of the brine ingredients.
2 Put the chicken into the pot with brine water and allow the chicken to absorb the brine for 10 hours sitting in the fridge.
3 While waiting, prepare your rub ingredients.
4 After 10 hours, get the brined chicken from the fridge and place the rub mixture into the brined chicken, making sure to coat all sides of the chicken with the rub and on the inside, as well.
5 Place the chicken in the smoker, and allow to smoke for allotted time.
