SAVORY SMOKED SAGE TURKEY

Ingredients:
- 1 (12 lb.) thawed whole turkey, neck and giblets removed
- 1 tbsp. chopped fresh savory
- 1 tbsp. chopped fresh sage
- 1 tbsp. salt (optional)
- 1 tbsp. ground black pepper
- 1/8 cup olive oil
- 1/2 cup water
Directions:

Wash the turkey thoroughly and pat-dry with some paper towels.
2In a mixing bowl, combine the black pepper, savory, salt, and sage.
3With half of the mixture, rub it inside the turkey and the neck area. Rub the rest of the 4herb mixture underneath the loosened skin near the breast and thigh areas before applying olive oil to the whole turkey.
5When smoking turkey, follow this general rule: smoke for 20 minutes for each pound of turkey. Serve.
