Preparation Time:

Estimated Smoke Time:
1 Hour 10 Mins
Smoke Temp:
275°F
Heat Source:
Charcoal, Wood Chips
Ingredients:
- 4 tbsp. salt
- 2 tsp. freshly ground black pepper
- 2 tsp. dark brown sugar
- 2 tsp. ground thyme
- 2 tsp. onion powder
- 1 tbsp. cayenne pepper
- 4 center cut, bone-in pork chops
Buttermilk BBQ Sauce:
- 1 cup apple cider
- 1 tbsp. brown sugar
- 1/2 preferred BBQ sauce
- 1 tbsp. buttermilk
Directions:
1 In a small bowl mix together cayenne pepper, salt, onion powder, black pepper, thyme, and brown sugar. After this you’re going to want to rub your pork chops with this mixture. Wrap the chops in plastic wrap and store in the fridge for four hours.
2 Place your chops in the smoker.
3 Get a medium saucepan and heat it up to medium-low heat. Add in the brown sugar and apple cider. Stir everything together. You’re going to let the mixture reduce for only 25 minutes. Turn the heat down to low, and pour in your preferred barbecue sauce. Stir everything well.
4 Once the sauce has been thoroughly warmed, turn off the heat source. Add in the buttermilk and stir it all together. Serve this over the pork chops, and you’re done!
