SMOKED PORK SAUSAGE
Being able to make your own sausages is very convenient. You know exactly what’s going into the sausage, and can make it to your personal preferences. Feel free to experiment with this recipe, and add to it to suit your own unique tastes.

Charcoal, Soaked Wood Chips
Ingredients:
- 20 lbs of home-dressed lean pork meat
- 10 lbs of clear fat pork
- 1/2 lb fine salt (best quality)
- 2 tsp. sugar
- 1 tbsp. ginger
- 2 tsp. pepper
- 1 tbsp. sage
- 2 tsp. cure (either Instacure #1 or Prague Powder #1)
Directions:
1 Cut all of the meat into cubes. Mix them all together in an extra-large bowl with the spices.
2 Using a sausage grinder, pass this mixed meat and spices through a medium plate on the grinder.
3 Stuff your sausages in natural pork casings so you’ll be able to smoke them.
4 Place them in the smoker.
5 You may have to switch out the sausages to smoke them. You can adjust how many you’re making by using less meat and spices.
